Carolina Sweet & Sour Cole Slaw




There’s not much better with pulled pork barbecue than sweet Carolina cole slaw!  I made a big  “batch” of bbq the other day that just begged for some homemade cole slaw.  This recipe is quick, easy, tasty, and healthy as it does not include mayo.  It does include sugar, but I cut down on that by using Splenda.   When substituting Splenda, you only need ½ the amount of sugar that is called for in the recipe.  If you want to spice it up, you can add chopped chili peppers or jalapenas.  If you want more veggies, you can add green or red peppers and radishes.  Again, it’s easy to make it your way!


Servings: about 8

Ingredients for the slaw
1 pound package old fashioned cole slaw mix (with carrots)
  (you can also use angel hair cole slaw mix and add your own grated carrots)
1 small white onion, finely chopped (optional)

Ingredients for the dressing
1 tablespoon white sugar (I used Splenda)
2 tablespoons brown sugar (I used Splenda brown sugar)
1 teaspoon mustard powder
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon celery seeds
2 tablespoons vegetable oil
1/4 cup distilled white vinegar

In a large bowl (big enough to hold the bag of slaw), whisk together the dressing, making sure there are no lumps. 

Add the slaw and onions to the bowl with the dressing  and mix well.  Cover and chill for at least an hour so the flavors will meld.    If the mixture seems dry at first, don’t worry as the veggies will release some water. 

Before serving, mix thoroughly and voila!  It’s the perfect picnic, cook out, or barbecue side dish!
