Now that it's grilling season and summer officially arrives next week, my new favorite cooking method is grilled foil packet dinners!
Following a visit to the local farmer's market where I purchased farm fresh green beans and baby red potatoes, I decided to try this dinner. The sausage and veggies blend perfectly. Another easy and yummy dinner!
INGREDIENTS:
· 1 pound fresh green beans, trimmed and halved
· 1 pound red potatoes, quartered

1
large onion, sliced
·
1
pound smoked sausage, cut into 1 inch pieces
·
1
red or yellow bell pepper, sliced (optional)
·
1
teaspoon salt
·
1
teaspoon ground black pepper
·
2
teaspoons Herbes de Provence (optional)
·
Garlic
powder to taste
·
1
teaspoon olive oil
·
1
teaspoon butter
·
1/4
cup water
DIRECTIONS:
1.
Preheat
charcoal or grill to 400 degrees F. (You can also do this in the oven at the
same temperature)
2.
On
a large sheet of heavy duty foil, place the green beans, red potatoes, onion, peppers,
and sausage. Season with salt and pepper, Herbes de Provence, and garlic
powder. Drizzle with oil, and top with
butter. Tightly seal foil around the ingredients, leaving only a small opening.
Pour water into the opening, and seal completely.
3.
Place
foil packet on the prepared grill. Cook 40 to 45 minutes, until sausage is
browned and vegetables are tender.
Tip:
You can easily bake this in the oven in a 9x13 casserole dish covered with
foil, at 400 degrees F for 40 to 45 minutes.
