Chili
is one of my favorites, especially in the fall and winter! I have many delicious recipes for chili (some of them are included in this blog) but
this is perhaps the easiest. It makes
enough for a crowd, cooks all day in the slow cooker, and comes together
very easily with items from your pantry.
And best of all it is delicious and you’d never know how easy it is to
make! It gets rave reviews when I serve
it, so give it a try and see for yourself!
Servings about 12

Tablespoons olive oil
3
pounds ground beef
1
medium onion, chopped
2
large (27-ounce) cans Bush’s Chili Beans with sauce, undrained
(I used mild but if your taste runs more spicy, use spicy!)
1
15-ounce can Seasoned Black Beans, undrained
1
16-ounce jar chunky salsa (or your favorite from the deli)
1
15-ounce can diced tomatoes with green chilis
3/4
cup beer (I used Guinness)
Fresh
ground black pepper to taste
Heat
olive oil in large skillet. Add onion
and ground beef and cook until browned and carmelized. I like to use a potato masher so that the
ground beef is in tiny crumbles. Drain off
any fat and pour into slow cooker.
Add
remaining ingredients to slow cooker and cook on low for 8-10 hours or on high for 4-5 hours. Top with shredded cheese, sour cream, corn
chips, chopped green onions, or guacamole.
As a variation, I sometimes serve this over rice… smiles galore!
