Skillet Potato Spinach Frittata



Cast Iron Skillet Potato Spinach Frittata
Servings: 4

It's such fun to cook in a cast iron skillet!  You can make everything from breakfast to dessert in your trusty skillet.  You will want to be sure that your skillet is seasoned; these days you can buy them already seasoned!  The skillets that I have are old ones that I mostly used to make cornbread and as such, they are well seasoned.  Frittatas are really easy to do in the skillet and the result is quite yummy!  Note that you can add bacon to this for another layer of flavor.

INGREDIENTS:
1-2 Tablespoons extra virgin olive oil
1 small onion, diced
½ package Southwestern style Simply Potatoes Hashbrowns
½ package frozen spinach, thawed and drained well
4 ounces shredded cheese (your choice… I used Gouda)
6 eggs
1/3 cup milk
Salt and pepper to taste

DIRECTIONS:
Preheat oven to 350 degrees F.
Saute the onions in the olive oil in cast iron skillet.
Add the potatoes and continue to cook until they begin to crisp, adding more oil if necessary.
Layer the spinach over the potatoes.
Salt and pepper to taste.
Sprinkle cheese over the spinach.
Whisk together eggs and milk and pour over the skillet mixture.
Salt & pepper again to taste, if desired.
Bake in 350 degree preheated oven for 30 minutes or until set.
