Cinnamon Raisin Rice



Servings: about 4

This was just perfect served with Bobotie!  It would also be good with most anything from pork chops to chicken to steak to seafood!  It's not sweet, and is definitely not rice pudding!  It's just an easy, excellent rice side dish.



INGREDIENTS:
3 Tablespoons unsalted butter
Salt and pepper to taste
2 cups low sodium chicken broth
1 cup long grain rice
¼ teaspoon ground cinnamon
½ cup golden raisins

DIRECTIONS:
In medium saucepan, bring broth to a boil.
Stir in rice, butter, salt, pepper, cinnamon and raisins.
Cover and reduce heat to simmer.
Simmer 15 to 20 minutes or until all liquid has been absorbed and rice is fluffy.
