Thank you Phyllis for another delicious recipe! This recipe for chicken marsala is elegant, simple, and tasty. The presentation is beautiful with the cheese topping and marsala mushroom sauce. It's company worthy for sure!
INGREDIENTS:
6
whole chicken breasts, boneless
Flour (for dredging)
1
cup butter
Salt
and pepper
1
½ cup sliced mushrooms
¾
cup Marsala wine
½
cup chicken stock
1
½ tablespoons butter
½
cup shredded mozzarella cheese
½
cup fresh grated parmesan cheese
DIRECTIONS:
Preheat
oven to 450 degrees F.
Pound
and flatten chicken. Coat with flour and brown in butter.
Place
in 9x11” pan, overlapping pieces.
Stir
mushrooms in ¼ cup butter and sprinkle over chicken.
Stir
wine and chicken stock into pan drippings. Simmer.
Add
salt, pepper and 1 ½ tablespoons butter.
Spoon
over chicken.
Mix the mozzarella and parmesan cheeses and sprinkle over chicken.
Bake
at 450 degrees F for 10-12 minutes.
Serve and smile!
