Thanks to my sister, Nancy, for introducing me to this recipe! She's a phenomenal cook and often tries new recipes. This one is going into my "keeper" file for sure! You know Fall is in the air when you think of apples (especially caramel apples!) and pork chops. This smells divine, looks divine, and tastes divine! Thank you Nancy! I served it with sweet potatoes and stir fried cabbage.
INGREDIENTS:
4
(3/4 inch) thick pork chops
1 Tablespoon vegetable or olive oil
4
Tablespoons brown sugar
Salt
and pepper to taste
¼
teaspoon ground cinnamon
3
to 4 Tablespoons butter
3
to 4 tart apples, peeled, cored and sliced
1
Tablespoon apple cider vinegar
3 Tablespoons chopped pecans (optional)
DIRECTIONS:

Preheat
oven to 350 degrees F
·
Heat
a large skillet over medium high heat.
Brown the chops with oil and transfer to oven proof pan.
·
In
a small bowl, combine brown sugar, salt, pepper, and cinnamon.
·
Add
butter to the skillet and stir in the brown sugar mixture, apples, and
vinegar. Cover and cook until apples are
just tender.
· Spoon
apples and sauce over pork chops.
·
Bake,
covered with aluminum foil, for 30 minutes, until pork chops are done.
·
If
desired, sprinkle with pecans.
Serve
chops, spooning sauce over top… and smile!
