Lemon Dill Rice



Lemon Dill Rice

What is better with seafood than lemon dill rice?  This is a delicious side dish to serve with seafood or chicken.  It's just perfect, not to lemony or dilly!  This recipe is for a rice cooker, but you can make it on the stove top.  Easy and delicious!


INGREDIENTS:
1 cup white Rice
1 3/4 cups water
1/2 tsp salt
zest of 1 lemon
1 tablespoon lemon juice
1/2 teaspoon dried dill (or 1 ½ teaspoons fresh dill)
1 teaspoon dried parsley or 1 tablespoon fresh flat-leaf parsley, minced
2 tablespoons butter, cut into 4 pieces
salt and pepper

DIRECTIONS:
Add all ingredients to the inner pot and stir to combine. Set to White Rice or press the Cook switch and cook until rice cooker switches to Keep-Warm. Let sit for 10 minutes. Adjust seasoning as desired and serve immediately.
